Small Batch One Banana Banana Muffins

My kids love bananas, and every now and then there is one over ripe banana left sitting on the counter that no one wants to eat. I never seem to have enough over ripe bananas to make all the delicious banana bread recipes we find online. So with a little creativity, we came up with these small batch, one banana banana muffins.

My kids are always excited to join me in the kitchen when I say we are making muffins!  This particular recipe we have been playing with for the last few months, so they are pros at making these banana muffins.  Each time we have adjusted the ingredients and I think these muffins are practically perfect!  Easy to make with a few simple ingredients and just the right amount of sweet.  

A lot of people have told me they get nervous about including their kids in the kitchen because they don’t want the extra mess.  If this is you, I totally understand!  You can always pre-measure all the ingredients for them, which will significantly cut down on the mess.  However, my youngest has always been interested in cracking eggs.  I was hesitant at first, and I have cleaned up my share of eggs that ended up straight on the ground, but now that he is 4 he seems to have it down.  So I would encourage you to let them do as much as they can.  They will be so proud when they taste their finished product!    

Just a quick note; if you are dairy free, we have successfully made these muffins with  coconut oil instead of butter.  And we plan to try them soon with coconut flour for a gluten free option.  Let us know in the comment section below if you have success with a gluten free flour.       

One Banana Banana Muffins

Ingredients:

  • 1/3 Cup Melted Butter
  • 1 Egg
  • 1 Ripe Banana
  • 1/4 Cup Honey
  • 1 Teaspoon Vanilla
  • 1/2 Cup Flour
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Baking Soda
  • Chopped walnuts or pecans (optional)

Directions:
Adult Prep:

  • Preheat oven to 425 degrees F
  • Melt butter in a small sauce pan.

Illustrated Instructions:

  1. Paint muffin tray with butter. (12 mini muffins or 6 regular muffins)
  2. Crack egg into a medium sized mixing bowl (with a pour spout, like this one, if possible)
  3. Pick out any egg shells.
  4. Add 1 banana, remaining butter, 1/4 cup honey and 1 teaspoon vanilla.
  5. Mix
  6. Add 1/2 cup flour, 1/4 teaspoon salt and 1/4 teaspoon baking soda.
  7. Mix
  8. Pour in to muffin tray.
  9. Top with chopped nuts (optional)
  10. Bake for mini muffins for 12-14 minutes and regular muffins for 14-16 minutes.
  11. Enjoy warm!
